Meatfree Monday recipe @70p per portion
Save money by having at least one day a week Meatfree.
Sweet Potato and Chickpea Balti
Ingredients
1 tbsp vegetable oil
1 onion, cut into thin wedges
3 tbsp Balti curry paste
500g Sweet Potato, diced
400g tin chopped tomatoes
400g tin chickpeas, drained
125 g frozen spinach
Method
1. Heat oil, add onion and fry for 3-4 minutes
2. Stir in the curry paste, add potato, cook until softer
3. Add tinned tomatoes and 300ml hot water and the chickpeas
4. Bring to the boil, simmer 10-15 minutes.
5. Season
6. Microwave the frozen spinach, spoon on top of the Balti, serve with Naan and/or Rice
My tip would be to maybe par-boil the potatoe before adding so that the cooking time is reduced.
